The Langley Community Farmer’s Market is excited to bring you fresh, locally inspired recipes cooked up in demonstration style each Wednesday until our last Wednesday Market date on October 4th. Each week we will prepare different delicious dishes for you to buy!
In partnership, this Wednesday September 11th with Langley Association for Community Living, who will be serving, we invite you to come out for a perogie, sausage and salsa feast made with only fresh, local ingredients from our very own vendors!
Wednesday Menu: (while supplies last)
4 perogies, 1 sausage and fresh salsa for $7.00
6 perogies, 2 sausages and fresh salsa for $10.00
Proceeds to benefit www.langleyacl.com and the Market (a non-profit society)
Karen’s Jambalaya (from August 30th)
Karen “Head Lemon Lady” from KICS Lemonade sure impressed us all with a quadruple batch of her Jambalaya. She cheerfully demonstrated step by step how to cook this delicious dish made with fresh local ingredients from right at the Langley community Farmers’ Market and everyone got a bowl to sample it when done…SO yummy!!
Here is the recipe…you should try for yourself!
Chicken and sausage Jambalaya
2 tbsp vegetable oil
½ lb Italian sausage, casing removed (hot or mild)
½ lb boneless, skinless chicken, diced
½ c celery, sliced
1` small onion, diced
1 clove garlic, minced
2 tins chicken broth
1 tomato, chopped
1 bay leaf
1 tbsp AJI (heat level of your choice)
¼ tsp oregano
¼ tsp thyme
1/8 tsp allspice
1 tin uncooked rice
In a large sauté pan, heat oil. Sauté onion and celery for 5 minutes, until soft. Add garlic, chicken and sausage, continue cooking until meat is no longer pink. Add remaining ingredients, cover, and cook 20 minutes or so, until rice is done. Season with salt and pepper if needed. Garnish with celery leaves. Shrimp can be added to this as well. If using, add it to the rice 5 minutes before rice is done.
